Ingredients
- 4 boneless, skinless chicken breasts
- 2 cup mixed apples, diced (Granny Smith and Honeycrisp recommended)
- 8 ounce Brie cheese, cut into small pieces
- 1 cup baby spinach leaves
- 2 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
1. Preheat your oven to 375°F.
2. Place the chicken breasts on a cutting board. Carefully cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
3. In a bowl, combine the diced apples, Brie cheese, and baby spinach leaves. Season the mixture with salt, pepper, garlic powder, onion powder, and dried thyme. Stir until well combined.
4. Carefully spoon the apple and Brie mixture into the pocket of each chicken breast, using your fingers to gently push the filling in.
5. Use toothpicks or kitchen twine to secure the open edges of the chicken, ensuring the filling stays in place during cooking.
6. Brush the outside of the chicken breasts with olive oil and season them with additional salt, pepper, and dried thyme for enhanced flavor.
7. Place the stuffed chicken breasts in a shallow baking dish and bake them in the preheated oven for 30–35 minutes, or until the chicken is cooked through (the internal temperature should reach 165°F).
8. Once the chicken is fully cooked, remove it from the oven and let it rest for 5 minutes before serving.
