- 4 boneless pork chops
- 2 tablespoon olive oil
- 1 large onion, thinly sliced
- 2 apples, cored and thinly sliced
- 1/2 cup apple butter
- 1/2 cup water or chicken broth
- 2 tablespoon whole grain mustard
- Salt and pepper, to taste
- 1 sprig rosemary (optional)
- 3 sage leaves (optional)
Instructions
- Season the pork chops generously with salt and pepper on both sides.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes per side until golden brown. Remove the pork chops from the pan and set them aside, tented with foil to keep warm.
- Add the remaining 1 tablespoon of olive oil to the skillet. Add the sliced onions, apples, and the optional rosemary and sage. Sauté for 4-5 minutes, stirring occasionally, until the onions are translucent and the apples are softened.
- In a small bowl, whisk together the apple butter, water (or chicken broth), and whole grain mustard until well combined.
- Pour the apple butter mixture into the skillet with the onions and apples. Stir to coat everything evenly and bring the sauce to a simmer.
- Return the pork chops to the skillet, spooning the sauce over the tops. Reduce the heat to medium-low and simmer for 5-7 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F.
- Serve the Apple Butter Pork Chops hot, with the apple butter sauce spooned generously over the top.
