  • 2 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 2 apples, cored and thinly sliced
  • 1/2 cup apple butter
  • 1/2 cup water or chicken broth
  • 2 tablespoon whole grain mustard
  • Salt and pepper, to taste
  • 1 sprig rosemary (optional)
  • 3 sage leaves (optional)

Instructions

  1. Season the pork chops generously with salt and pepper on both sides.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes per side until golden brown. Remove the pork chops from the pan and set them aside, tented with foil to keep warm.
  3. Add the remaining 1 tablespoon of olive oil to the skillet. Add the sliced onions, apples, and the optional rosemary and sage. Sauté for 4-5 minutes, stirring occasionally, until the onions are translucent and the apples are softened.
  4. In a small bowl, whisk together the apple butter, water (or chicken broth), and whole grain mustard until well combined.
  5. Pour the apple butter mixture into the skillet with the onions and apples. Stir to coat everything evenly and bring the sauce to a simmer.
  6. Return the pork chops to the skillet, spooning the sauce over the tops. Reduce the heat to medium-low and simmer for 5-7 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F.
  7. Serve the Apple Butter Pork Chops hot, with the apple butter sauce spooned generously over the top.
