Irresistible Apple Cinnamon Muffins: A Cozy Fall Treat
Ingredients
- 1 3/4 cup all-purpose flour
- 2 1/2 teaspoon baking powder
- 1 teaspoon fine sea salt
- 1 teaspoon ground cinnamon
- 2/3 cup light brown sugar, lightly packed
- 2 large eggs
- 1 cup whole milk
- 1 teaspoon pure vanilla extract
- 6 tablespoon unsalted butter, melted
- 2 cup finely diced apple (peeled Golden Delicious or yellow apple)
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 teaspoon ground cinnamon
Instructions
1. Preheat your oven to 425°F. Grease a 12-cup muffin tin and line it with paper liners.
2. Combine the flour, baking powder, salt, and cinnamon in a medium bowl.
3. In a large bowl, whisk together the brown sugar, eggs, milk, and vanilla extract until smooth. Stir in the melted butter until fully incorporated.
4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
5. Toss the diced apples in the remaining 2 tablespoon of flour to help prevent them from sinking to the bottom of the muffins. Gently fold the coated apples into the batter.
6. Spoon the batter into the prepared muffin liners, filling each one about 3/4 full. Top each muffin with a scant tablespoon of the cinnamon-sugar crumble mixture.
7. Bake the muffins at 425°F for about 15 minutes, or until they’re golden brown and a toothpick inserted into the center comes out clean. Allow the muffins to cool slightly before serving.
Notes
To ensure your muffins turn out perfectly moist and bursting with flavor, bring your eggs and milk to room temperature before baking. Avoid overmixing the batter to prevent tough muffins. Tossing the diced apples in a bit of flour helps prevent them from sinking.
