  • 1 cup grated zucchini (squeezed dry)
  • 1 cup grated apple (peeled, Granny Smith recommended)
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • ¾ cup granulated sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • ½ cup vegetable oil (or melted coconut oil)
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts or pecans (optional)

Instructions

1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.

2. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

3. In a separate bowl, beat the eggs, granulated sugar, brown sugar, oil, and vanilla extract until smooth.

4. Gently fold the grated zucchini and apple into the wet mixture.

5. Divide the muffin batter evenly among the prepared muffin cups, filling each one about ¾ full.

6. Bake the muffins for 20–25 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For the best results, opt for tart and crisp Granny Smith apples.
