- 12 fresh jalapeño peppers
- 2 cups cooked macaroni
- 1 cup shredded sharp cheddar cheese
- 4 oz cream cheese, softened
- ½ cup sour cream
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 12 slices of bacon
Instructions
- Preheat your oven to 375°F (190°C).
- Slice each jalapeño in half lengthwise and remove the seeds and membranes.
- In a large mixing bowl, combine cooked macaroni, cheddar cheese, cream cheese, sour cream, garlic powder, smoked paprika, salt, and black pepper.
- Spoon the mac and cheese mixture into each jalapeño half, packing it in generously.
- Wrap each stuffed jalapeño with a half slice of bacon, securing with toothpicks if necessary.
- Place jalapeños on a baking sheet lined with parchment paper and bake for 25-30 minutes until bacon is crispy.
- Let cool slightly before serving. Garnish with chopped fresh cilantro if desired.

Feel free to experiment with different types of cheese or add spices for extra heat. You can prepare these bites in advance and bake them right before serving.
