  • 1/2 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 10–12 slices bacon
  • 2 pound potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 1/2 cup butter
  • 1/2 cup milk or heavy cream
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh parsley (optional)

Instructions

1. Preheat your oven to 350°F. In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, eggs, milk, Parmesan cheese, Worcestershire sauce, oregano, thyme, salt, and pepper. Mix everything together gently, being careful not to overwork the meat mixture.

2. Shape the meatloaf mixture into a loaf and place it on a baking sheet or in a loaf pan. Lay the bacon slices over the top of the meatloaf, tucking the ends under the loaf if needed to fully cover it.

3. Bake the bacon-wrapped meatloaf for about 1 hour, or until it reaches an internal temperature of 160°F. The bacon should be crispy and golden brown. Let the meatloaf rest for a few minutes before slicing and serving.

4. While the meatloaf is baking, prepare the garlic mashed potatoes. In a large pot, cover the peeled and cubed potatoes with salted water and bring to a boil. Cook the potatoes until fork-tender, about 15 minutes.

5. Drain the cooked potatoes and return them to the pot. Add the minced garlic, butter, and milk or cream. Mash the potatoes together until smooth and creamy. Season with salt and pepper to taste, then stir in the chopped fresh parsley if desired.

Notes
