Description
Banana Zucchini Bread is a delightful and moist quick bread that combines the natural sweetness of ripe bananas with the subtle flavor and moisture of fresh zucchini. It’s perfect for breakfast or a snack.
Ingredients
- 2 ripe bananas, mashed
- 1 cup grated zucchini
- 1/3 cup melted butter
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup sugar
- 1 large egg
- 1 cup all-purpose flour
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
2. In a large bowl, combine the mashed bananas, grated zucchini, melted butter, vanilla extract, sugar, and egg. Mix until well blended.
3. Stir in the baking soda, salt, and flour. Mix just until combined—do not overmix.
4. Pour the batter into the prepared loaf pan. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
5. Allow the Banana Zucchini Bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!
Notes
Use ripe bananas with brown flecks for better flavor.
Grate zucchini using the large holes of a box grater for best results.
Avoid overmixing to prevent a dense texture.
Check doneness with a toothpick to avoid overbaking.
