- 1 lb ground beef
- 1/2 lb bacon, cooked and crumbled
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1/4 cup BBQ sauce, plus extra for topping
- 1 large egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, crumbled bacon, breadcrumbs, milk, BBQ sauce, egg, chopped onion, minced garlic, smoked paprika, salt, and black pepper. Mix until well combined, but don’t overwork the meat.
- Shape the Meatloaf: Form the meat mixture into a loaf shape and place it on the prepared baking sheet or in the loaf pan.
- Bake the Meatloaf: Bake the meatloaf in the preheated oven for 45 minutes. After 45 minutes, spread a generous layer of BBQ sauce over the top and continue baking for another 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
- Add the Cheese: During the last 5 minutes of baking, sprinkle the shredded cheddar cheese on top of the meatloaf. Return to the oven and bake until the cheese is melted and bubbly.
