Barbecue Ribs – seasoned and cooked (beef or pork)

Macaroni pasta – elbow or small tubular

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cups milk

4 tbsp butter

2 tbsp flour (for roux)

Paprika, garlic powder, onion powder, salt, pepper

Optional: Bacon bits, green onions, BBQ sauce for topping


Instructions

1. Season the ribs with a dry rub of brown sugar, paprika, garlic powder, onion powder, salt, and pepper.

2. Bake ribs at 300°F for 2–3 hours or grill over indirect heat until tender.

3. Prepare macaroni according to package instructions and drain.

4. In a saucepan, melt butter and whisk in flour to make a roux. Gradually add milk, whisking until thickened.

5. Stir in cheddar, mozzarella, and Parmesan cheeses. Season with spices to taste.

6. Toss cooked pasta with cheese sauce until well coated.

7. Transfer mac and cheese to a serving platter or baking dish.

8. Slice cooked ribs and place on top of the mac and cheese.

9. Garnish with green onions, bacon bits, or BBQ sauce as desired.

Notes

Use baby back or St. Louis-style ribs for best results.

Cheese sauce can be made ahead and stored in the fridge.

Bake the assembled platter for 10–15 minutes if desired for a bubbly finish.

Pairs well with coleslaw, baked beans, or cornbread.
