- 2 shallots, minced

Instructions
1. Slice each chicken breast horizontally and pound to an even 1/2-inch thickness. Season with salt and pepper, then dredge in flour.
2. Heat olive oil in a large skillet over medium-high heat. Cook chicken for about 4 minutes per side until golden brown and cooked through. Remove and set aside.
3. In the same skillet, melt butter over medium heat. Add mushrooms, shallots, salt, and pepper; cook for 5-6 minutes until browned.
4. Stir in 1 teaspoon of flour and cook for an additional minute. Pour in heavy cream, parsley, and lemon zest; stir until smooth.
5. Return chicken to skillet, spoon sauce over top, garnish with extra lemon zest, and serve immediately.
