Ingredients

Scale
  • 2 lbs Beef Chuck Roast: Ideal for slow cooking, becoming tender and flavorful.
  • 45 Dried Guajillo Chiles: For a smoky heat in the sauce.
  • 12 Chipotle Peppers in Adobo: Adds depth and smokiness.
  • 1 Onion, chopped: Aromatic base for the sauce.
  • 4 cloves Garlic, minced: Enhances flavor.
  • 1/4 cup Apple Cider Vinegar: Balances richness.
  • 1 tsp Ground Cumin: Provides warmth.
  • 1 tsp Dried Oregano: Adds earthy notes.
  • 1/2 tsp Ground Cinnamon: For a hint of sweetness.
  • 4 cups Beef Broth: Tenderizes beef and creates dipping broth.
  • 1012 Corn Tortillas: For serving.
  • 12 cups Shredded Cheese: For a melty taco filling.
  • Chopped Onion and Fresh Cilantro: For topping.

Instructions

  1. Soak the dried guajillo chiles in hot water for about 10 minutes to soften.
  2. Blend the softened chiles with the chipotle peppers, chopped onion, minced garlic, apple cider vinegar, and spices until smooth to create the birria sauce.
  3. In the Crock Pot, place the chunks of beef chuck roast and pour the prepared birria sauce and beef broth over the top.
  4. Cover and cook on low for 8 hours until the beef is tender and easily shredded.
  5. Remove the beef from the Crock Pot and shred it using two forks.
  6. Dip each corn tortilla into the cooking broth, fill with shredded birria and shredded cheese, and grill or pan-fry until golden and crispy.
  7. Serve topped with chopped onion and cilantro, alongside a side of the flavorful birria broth for dipping.

Notes

  • For extra flavor, you can add a squeeze of lime juice right before serving.
  • Feel free to customize toppings with avocado or salsa as desired.
