Description

Blackstone BBQ Chicken and Corn is a mouthwatering dish that combines juicy marinated chicken with charred corn on the cob, all cooked to perfection on a Blackstone griddle. Perfect for summer cookouts!

Ingredients

Scale
  • 1½ lbs chicken breasts or boneless thighs, diced
  • 1 tbsp Worcestershire sauce
  • 3–4 garlic cloves, minced
  • Kosher salt, black pepper, and your favorite barbecue seasoning
  • 2 tbsp melted butter
  • 4 ears of corn on the cob, shucked
  • Cooking oil (any kind)

Instructions

1. Start by preparing the Blackstone BBQ Chicken. In a large bowl, toss the diced chicken with Worcestershire sauce, minced garlic, a generous sprinkle of salt, pepper, and your favorite barbecue seasoning. Drizzle in the melted butter and mix everything together until the chicken is evenly coated. Allow the chicken to marinate for 15-30 minutes.

2. While the chicken is marinating, preheat your Blackstone griddle over medium-high heat. Lightly oil the surface to prevent sticking.

3. Place the shucked corn directly on the hot Blackstone griddle. Rotate the ears every few minutes, allowing all sides to develop a delightful char and tender texture – this should take about 10-12 minutes. Once the corn is perfectly grilled, remove it from the heat and keep it warm.

4. Add the marinated chicken to the preheated griddle, spreading it out in a single layer. Cook, flipping occasionally, until the chicken is golden brown and cooked through, about 8-10 minutes.

5. To serve, arrange the grilled chicken and charred corn on a platter or individual plates. Drizzle the chicken with your favorite barbecue sauce if desired.

Notes

For a spicy variation, add hot sauce or cayenne pepper to the chicken marinade.

To make a vegetarian version, grill an assortment of summer vegetables instead of chicken.
