Ingredients
- 1 cup gluten-free rolled oats
- 1/2 cup gluten-free oat flour
- 1/4 cup almond flour
- 1/4 cup brown sugar or maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup grated zucchini, squeezed dry
- 1/2 cup fresh blueberries
- 1/4 cup lemon juice
- 2 tablespoon lemon zest
- 1/4 cup melted coconut oil or unsalted butter
- 1 egg
- 1 teaspoon vanilla extract
Instructions
1. Preheat your oven to 350°F. Line an 8×8-inch baking pan with parchment paper for easy removal and cleanup.
2. In a large bowl, combine the gluten-free rolled oats, gluten-free oat flour, almond flour, brown sugar (or maple syrup), baking powder, cinnamon, and salt. Stir the dry ingredients until well mixed.
3. Add the grated zucchini, lemon juice, lemon zest, melted coconut oil (or butter), egg, and vanilla extract to the dry ingredients. Mix everything together until the batter is well combined.
4. Gently fold the fresh blueberries into the batter, being careful not to overmix and damage the delicate berries.
5. Transfer the batter to the prepared baking pan and spread it out evenly. Bake the Blueberry Zucchini Bars for 25–30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
6. Allow the bars to cool completely in the pan before slicing and serving.
