Ingredients
- 1 pound lean flank steak, trimmed of fat and thinly sliced
- 4 cup baby bok choy, chopped (stems and leaves separated)
- 1 medium red bell pepper, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1/2 cup water
- 1 tablespoon hoisin sauce (optional)
- 1 teaspoon sriracha (optional, for heat)
- Cooking spray
- Green onions and sesame seeds for garnish
Instructions
1. Prepare the Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, cornstarch, water, hoisin sauce (if using), and sriracha. Set aside.
2. Cook the Beef: Heat a wok or large skillet over medium-high heat, coat with cooking spray, and stir-fry the beef for 2–3 minutes until browned. Remove the beef from the pan and set aside.
3. Sauté the Veggies: Add the garlic, ginger, red bell pepper, and bok choy stems to the pan. Stir-fry for 2–3 minutes. Then, add the bok choy leaves and cook until just wilted.
4. Combine and Finish: Return the beef to the wok, pour in the sauce, and stir-fry for another 2–3 minutes until the sauce thickens and everything is well coated.
5. Serve: Garnish the Bok Choy Stir-Fried Beef with sliced green onions and sesame seeds. Serve hot, accompanied by steamed rice or noodles.
