  • 1/4 teaspoon cinnamon
  • 3 tablespoon butter
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F. Grease an 8×10-inch casserole dish (an 8×8 or 9×9 dish works too).
  2. Fill a large pot with the sweet potato pieces and enough water to cover them by 2 inches. Bring the water to a boil over high heat and cook the potatoes until they are fork-tender, about 10 minutes. Drain the water and return the potatoes to the pot.
  3. Using a potato masher or an electric mixer, mash the sweet potatoes until they are mostly smooth. Add the butter, brown sugar, heavy cream, salt, vanilla extract, cinnamon, and nutmeg. Mix everything together until well combined.
  4. Spoon the mashed sweet potato mixture into the prepared casserole dish and use the back of a wooden spoon or mixing spatula to smooth it out. Sprinkle the mini marshmallows evenly over the top of the sweet potatoes.
  5. In a medium bowl, combine the flour, brown sugar, salt, oats, and cinnamon. Cut in the room temperature butter using a pastry cutter or your hands until the mixture is crumbly. Sprinkle the topping over the marshmallows.
  6. Place the casserole in the preheated oven and bake for 20-30 minutes, or until the streusel topping is crisp and the marshmallows are golden brown.
