Whether you’re entertaining guests or simply craving a delectable weeknight meal, this dish is sure to impress and satisfy your taste buds.

Ingredients

Scale
  • 4 bone-in pork chops (about 1 pound)
  • 8 ounce Boursin cheese (herb and garlic flavor)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Fresh parsley, chopped for garnish

Instructions

1. Preheat your oven to 375°F.

2. Using a sharp knife, carefully cut a pocket into the center of each pork chop, being careful not to cut all the way through.

3. In a small bowl, combine the Boursin cheese, minced garlic, and chopped thyme. Spoon this flavorful mixture into the pockets you created in the pork chops. Season the outside of the chops with salt and pepper.

4. Heat the olive oil in a large, oven-safe skillet over medium-high heat. Sear the stuffed pork chops for 2-3 minutes per side, or until they develop a nice golden-brown crust.

5. In a small bowl, whisk together the chicken broth, Dijon mustard, and honey. Pour this mixture over the seared pork chops in the skillet.

6. Transfer the skillet to the preheated oven and bake the Boursin Stuffed Pork Chops for 20-25 minutes, or until the pork is cooked through and the internal temperature reaches 145°F.

7. Once the pork chops are done, remove them from the oven and sprinkle with fresh, chopped parsley. Serve warm, with the delicious sauce spooned over the top.

Notes

Let the Pork Rest: After cooking, allow the pork chops to rest for 5-10 minutes before serving. This allows the juices to redistribute throughout the meat.

Check for Doneness: Use a meat thermometer to ensure the pork chops reach an internal temperature of 145°F for medium doneness. This is the safe minimum temperature recommended by the USDA.
