Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup brown sugar, packed
  • 1 cup fresh pineapple chunks (or canned)
  • ½ cup soy sauce
  • ¼ cup ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Chopped fresh cilantro (for garnish)

Instructions

1. Season Chicken: Lightly season the chicken breasts with salt and pepper on both sides.

2. Sear Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 3–4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

3. Make Sauce: In the same skillet, combine the brown sugar, soy sauce, ketchup, minced garlic, ground ginger, and pineapple chunks. Stir well and bring the mixture to a simmer.

4. Add Chicken: Return the seared chicken breasts to the skillet. Spoon some of the delicious sauce over the top of the chicken and reduce the heat to medium-low.

5. Simmer: Cover the skillet and simmer for 20–25 minutes, flipping the chicken halfway through, until the chicken is cooked through and the sauce has thickened.

6. Garnish and Serve: Sprinkle the freshly chopped cilantro over the top and serve the Brown Sugar Pineapple Chicken hot.

Notes

If you don’t have fresh pineapple on hand, you can easily substitute canned pineapple chunks. Just be sure to drain them well before adding to the recipe.
