Instructions

1. Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

2. Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt.

3. Cream Butter & Sugars: In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.

4. Add Eggs & Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.

5. Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

6. Prepare Filling: In a small bowl, mix together the 1 cup of brown sugar, cornstarch, and cinnamon.

7. Roll Dough: Divide the dough in half. Roll each half into a rectangle about ¼ inch thick.

8. Cut & Fill: Cut the dough into rectangles. Place a spoonful of the filling on half of the rectangles, then cover with the remaining rectangles. Press the edges to seal.

9. Brush & Bake: Brush the tops of the cookies with milk. Bake for 12–15 minutes or until the edges are lightly golden. Allow to cool completely.

10. Prepare Icing: In a small bowl, mix the powdered sugar and 2 tablespoons of milk until smooth. Drizzle the icing over the cooled cookies and decorate with sprinkles, if desired.
