Description

Ingredients
- 2 pound butternut squash
- 2 tablespoon olive oil
- 2 tablespoon packed brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cinnamon
Instructions
1. Preheat your oven to 400°F. Peel the butternut squash, cut off the ends, and slice it in half lengthwise. Scoop out the seeds and discard them. Cut the squash into 1-inch cubes.
2. In a large bowl, whisk together the olive oil, brown sugar, salt, black pepper, and ground cinnamon until the sugar is dissolved and the mixture is smooth.
3. Add the cubed squash to the bowl and toss until each piece is evenly coated with the glaze.
4. Spread the glazed squash cubes in a single layer on a parchment-lined baking sheet. Roast in the preheated oven for 25–30 minutes, stirring once halfway through, until the squash is tender and caramelized.
