These bite-sized wonders combine the bold, spicy goodness of buffalo chicken with the melty, gooey comfort of freshly baked pizza dough. Perfect for game day or any gathering, they’re sure to be the star of the show.

Ingredients

Scale
  • 2 cups: Cooked Chicken, shredded or diced
  • 1/2 cup: Buffalo Sauce
  • 1 cup: Mozzarella Cheese, shredded
  • 1 cup: Cheddar Cheese, shredded
  • 4 oz: Cream Cheese, softened
  • 1 package: Pizza Dough, refrigerated or homemade
  • 2 tbsp: Olive Oil
  • 1 tsp: Garlic Powder
  • Salt and Pepper: to taste
  • 2 tbsp: Green Onions, chopped (for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Mix the Filling: In a large bowl, combine the shredded chicken, buffalo sauce, mozzarella cheese, cheddar cheese, and softened cream cheese. Mix until well-combined.
  3. Roll Out the Dough: On a lightly floured surface, roll out the pizza dough into a rectangular shape, about 1/4 inch thick.
  4. Spread the Filling: Spread the chicken and cheese mixture over the dough, leaving a small border around the edges.
  5. Roll and Cut: Roll the dough tightly from one of the longer sides into a log. Slice the log into 1-inch pieces and place on a baking sheet lined with parchment paper.
  6. Brush and Bake: In a small bowl, combine olive oil, garlic powder, salt, and black pepper. Brush this mixture over the rolls. Bake for 20-25 minutes until golden brown and cheese is melted.
  7. Garnish and Serve: Remove from the oven, garnish with chopped green onions, and serve hot with your favorite dipping sauces.

Notes

Feel free to experiment with different types of cheese, such as blue cheese or pepper jack. Adjust the amount of buffalo sauce to control the spiciness. To make the dish healthier, consider using low-fat cheeses or whole-wheat pizza dough.
