Ingredients
- 1 pound sweet Italian sausage
- 1 medium butternut squash, cubed
- 1 cup diced fire-roasted tomatoes
- 1 cup chopped kale or spinach
- 8 ounce cheese tortellini
- 1/2 cup heavy cream
- 1 medium sweet onion, diced
- 2 cloves garlic, minced
- 2 tablespoon tomato paste
- 4 cup chicken stock
- 1/4 cup grated Parmesan cheese
Instructions
1. Start by heating a large pot over medium heat and adding the sweet Italian sausage. Break the sausage apart with a wooden spoon as it cooks, allowing it to brown and develop a delicious caramelized crust.
2. Once the sausage is browned, add the diced sweet onion, minced garlic, and cubed butternut squash. Sauté until the onions are translucent and the squash begins to soften, about 5-6 minutes.
3. Stir in the tomato paste and let it cook for a couple of minutes.
4. Pour in the diced fire-roasted tomatoes and the chicken stock. Bring to a boil, then reduce heat and let it simmer for 15-20 minutes, or until the squash is tender.
5. Stir in the heavy cream, followed by the chopped kale or spinach and the cheese tortellini. Allow to simmer for an additional 5 minutes.
6. Ladle into bowls and top with freshly grated Parmesan cheese.
