  • 1 lb smoked sausage, sliced
  • 1 tablespoon Cajun seasoning
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Cook the Pasta: Cook the pasta according to the package directions until al dente. Drain and set aside, reserving 1/4 cup of pasta water.
  • Cook the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  • Sauté the Garlic: In the same skillet, add the minced garlic and sauté for 1-2 minutes, until fragrant.
  • Make the Garlic Butter Sauce: Add the butter to the skillet and melt it. Once melted, add the heavy cream and chicken broth, stirring to combine. Bring to a simmer and let it cook for 3-4 minutes until the sauce thickens slightly.
  • Season the Sauce: Stir in the Cajun seasoning and grated Parmesan cheese. Season with salt and pepper to taste.
  • Combine Pasta and Sausage: Return the cooked sausage to the skillet and add the cooked pasta. Toss everything together, adding reserved pasta water if needed to help coat the pasta in the sauce.
