- 2 large sweet potatoes
- 2 tablespoon olive oil
- 8 strips bacon
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup marshmallow fluff (optional)

Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper or aluminum foil.
- Peel and cut the sweet potatoes into 1-inch chunks, then toss them with the olive oil in a large bowl. Spread the sweet potato chunks in a single layer on the prepared baking sheet and roast for 20-25 minutes, until they’re soft but not falling apart. Allow the sweet potatoes to cool slightly.
- While the sweet potatoes are roasting, cook the bacon strips in a frying pan over medium heat until partially cooked but still pliable, about 5-6 minutes. Drain the bacon on paper towels.
- Once the sweet potatoes have cooled slightly, thread a piece of sweet potato followed by a strip of bacon (wrapped around the potato) onto the pre-soaked wooden skewers. Continue this alternating pattern until the skewer is full.
- In a small bowl, mix together the brown sugar, granulated sugar, cinnamon, nutmeg, cloves, and optional cayenne pepper and red pepper flakes. Generously sprinkle this spice mixture over the skewers, coating both the bacon and sweet potato.
- Place the prepared skewers on the lined baking sheet and return them to the oven. Bake for an additional 10-15 minutes, or until the bacon is crispy and the sugar mixture has caramelized.
- If using marshmallow fluff, heat it in a microwave-safe bowl for 10-15 seconds until warm and easily drizzled. Drizzle the warm marshmallow fluff over the hot skewers just before serving.
- Serve the Candied Sweet Potato and Bacon Skewers immediately while they’re hot and the bacon is at its crispiest.
