Ingredients
- 6 eggs
- 6 egg whites
- 4 oz mozzarella cheese, shredded
- Pepperoni slices
- 1 teaspoon garlic powder (optional)
- 2 teaspoons oregano (optional)
- 1/2 teaspoon onion powder (optional)
Instructions
1. Preheat Oven: To 375°F (190°C). Grease a muffin tin or line with silicone muffin cups.
2. Mix Eggs: In a large bowl, whisk together the eggs and egg whites until fully combined.
3. Add Seasoning: Stir in the garlic powder, oregano, and onion powder if using.
4. Assemble Muffins: Pour the egg mixture evenly into the prepared muffin cups, filling each about 3/4 full. Sprinkle shredded mozzarella on top and place 2–3 pepperoni slices on each muffin.
5. Bake: Place in the oven and bake for 18–20 minutes or until the muffins are puffed up and the centers are set.
6. Cool and Serve: Let cool slightly before removing from the tin. Serve warm or store in the fridge for a quick, high-protein snack!
Notes
Avoid Overcooking: Keep a close eye on the muffins during baking to prevent them from becoming dry or rubbery.
Customize the Toppings: Feel free to experiment with different cheese varieties or swap the pepperoni for your favorite keto-friendly toppings.
Store Properly: These muffins will keep in the fridge for up to 5 days, making them a great make-ahead snack. Just reheat in the microwave or oven before serving.
