Ingredients
- 2 medium-sized carrots, peeled and grated or julienned
- 1 large cucumber, peeled and thinly sliced
- 2 tablespoons olive oil

- 1 teaspoon honey or maple syrup
- Salt to taste
- Pepper to taste
- Fresh dill or sesame seeds (optional)
- Lemon juice (optional)
Instructions
1. Wash the carrots and cucumbers thoroughly.
2. Peel the carrots if desired, then grate or julienne them.
3. Slice cucumbers into thin rounds or half-moons.
4. Place prepared vegetables in a large bowl.
5. In a small bowl, whisk together olive oil, rice vinegar, honey or maple syrup, salt, and pepper.
6. Pour the dressing over the grated carrots and sliced cucumbers.
7. Toss everything together until vegetables are evenly coated.
8. Let the salad sit for about 10 minutes before serving to enhance flavors.
