This version adds shredded carrots for a hint of sweetness and vibrant color, making it a delicious twist on the classic dish. Whether served as an appetizer, snack, or light meal, it’s a culinary canvas that allows for endless customization!

Ingredients

Scale
  • 1 cup shredded carrots
  • 1 cup shredded cabbage
  • 2 green onions, chopped
  • 1 cup all-purpose flour (or gluten-free flour)
  • 2 large eggs (or flaxseed meal for a vegan option)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon soy sauce
  • 2 tablespoons vegetable oil (for cooking)

Optional Toppings

  • Japanese mayo
  • Okonomiyaki sauce
  • Bonito flakes
  • Chopped green onions
  • Toasted sesame seeds

Instructions

Preparing the Vegetables

Shred the carrots and cabbage using a box grater or food processor until fine. Chop the green onions into small pieces.

Making the Batter

In a large mixing bowl, combine the shredded carrots, cabbage, and green onions. Add the all-purpose flour, eggs, salt, black pepper, and soy sauce. Mix gently until just combined; avoid over-mixing to keep the batter light and fluffy.

Cooking the Pancakes

Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Once hot, spoon the batter into the pan to form round pancakes. Flatten them slightly with the back of the spoon. Cook for 3–4 minutes on each side until golden brown and cooked through. Optionally, bake or grill for a different texture.

Notes

This dish can be served with various toppings to suit your taste. Pair it with a refreshing salad or pickled vegetables for a complete meal. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in a skillet for best results.
