Description

Cheddar Bacon Potato Wedges are the ultimate crowd-pleasing snack for good reason. Not only are they incredibly tasty, but they’re also incredibly versatile. These wedges can be served as an appetizer, a side dish, or even the main event – they’re that satisfying. The comfort food appeal of the crispy potato, gooey cheese, and salty bacon is hard to beat.

  • 3 large baking potatoes
  • vegetable oil, for frying
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 1 1/2 cup shredded Cheddar cheese
  • 8 slices bacon, cooked and crumbled

Instructions

1. Preheat Oven: Set your oven to 350°F.

2. Cut Wedges: Cut each potato in half lengthwise, then slice each half into three equal wedges. Slice a small amount off the top of each wedge so it sits flat.

3. Heat Oil & Fry: Pour enough vegetable oil into a large pot to a depth of about 2 inches. Heat the oil to 350°F. Fry the potato wedges in batches until golden and crisp, about 5-7 minutes per batch. Transfer the fried wedges to a paper towel–lined tray to drain.

4. Season Wedges: Arrange the fried wedges on a baking sheet and season them with the kosher salt and coarse ground black pepper.

5. Add Cheese & Bacon: Sprinkle the shredded Cheddar cheese evenly over the wedges. Add half of the crumbled bacon on top.

6. Bake: Place the baking sheet in the preheated oven for 15 minutes or until the cheese is melted and bubbling. Then, sprinkle the remaining bacon on top and bake for an additional 5 minutes.

7. Serve Hot: Remove the wedges from the oven, let them cool for a minute, and serve immediately while the cheese is gooey and the wedges are crisp.

Notes

For the best texture, use starchy Russet potatoes. Maintain the oil temperature at 350°F for crisp, golden-brown wedges.
