Ingredients
- 1 pound fresh green beans, trimmed and cut into bite-sized pieces
- 1 cup sharp cheddar cheese, shredded (divided)
- 1 cup sour cream
- 10.5 ounce low-sodium cream of mushroom soup
- 1 cup French fried onions (for topping)
Instructions
1. Preheat your oven to 350°F.
2. Bring a large pot of salted water to a boil. Add the trimmed and cut green beans and blanch for 5 minutes, until they’re bright green and slightly tender. Drain the beans and set them aside.
3. In a mixing bowl, combine the cream of mushroom soup, sour cream, and half of the shredded cheddar cheese. Stir the mixture until it’s smooth and well combined.
4. Fold the blanched green beans into the creamy cheese sauce until they’re evenly coated. Transfer the mixture to a greased baking dish and spread it out evenly.
5. Sprinkle the remaining cheddar cheese over the top of the casserole, followed by the French fried onions. Bake the casserole for 25-30 minutes, or until it’s hot and bubbly.
