Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 4 tablespoon butter
  • 4 tablespoon all-purpose flour
  • 6 cup beef broth
  • 2 cup elbow macaroni, uncooked
  • 1 cup heavy cream
  • 2 cup sharp cheddar cheese, shredded
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon white vinegar
  • Salt and black pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium-high heat until browned and crumbled. Season with salt and pepper. Drain excess fat and set aside.
  2. In the same pot, melt the butter over medium heat. Add the diced onion, carrots, and celery. Cook for 5 to 7 minutes until tender. Add minced garlic and cook for 1 minute more.
  3. Sprinkle the all-purpose flour over the sautéed vegetables and stir constantly for 1 to 2 minutes.
  4. Slowly pour in the beef broth while stirring to prevent lumps. Stir in dried basil and oregano. Bring to a boil, then reduce heat and simmer for 5 minutes.
  5. Add the uncooked elbow macaroni and cook for 7 to 8 minutes until al dente.
  6. Reduce heat to low and stir in heavy cream and shredded cheddar cheese until melted.
  7. Return the cooked ground beef to the pot and stir well. Add white vinegar, adjust seasoning with salt and pepper, and serve hot.
