Description

Cheesy Bacon Chicken Pinwheels are a savory and satisfying dish that combines tender chicken, creamy cheese, and crispy bacon. Perfectly rolled and golden-brown, these pinwheels are a hit for any occasion, from family dinners to parties. Quick to prepare, they deliver a delicious, cheesy experience in every bite.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 8 slices of bacon, cooked and crumbled
  • 1 ½ cups shredded cheddar cheese
  • 4 oz cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  • Prepare the Chicken: Place each chicken breast between two pieces of plastic wrap and gently pound with a meat mallet to an even thickness of about ½ inch.
  • Prepare the Filling: In a small bowl, combine the softened cream cheese, garlic powder, onion powder, shredded cheddar cheese, crumbled bacon, salt, and pepper. Mix until well combined.
  • Fill the Chicken: Spread an even layer of the cream cheese mixture over each chicken breast. Carefully roll up the chicken tightly, securing the filling inside.
  • Secure the Pinwheels: Use toothpicks to secure the chicken rolls, ensuring they stay rolled up during cooking.
  • Cook the Pinwheels: Heat olive oil in a skillet over medium heat. Once hot, place the chicken pinwheels seam-side down in the skillet and cook for 2-3 minutes per side until golden brown.
  • Transfer to the Oven: Place the skillet in the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Garnish and Serve: Remove the toothpicks and garnish with fresh parsley if desired. Serve hot and enjoy!

Notes

  • Feel free to adjust the level of seasoning to suit your taste.
  • You can substitute the cheddar cheese with mozzarella or a cheese blend for a different flavor.
  • If you don’t have a meat mallet, you can use a rolling pin or the back of a pan to flatten the chicken.
  • Store leftovers in an airtight container for up to 3 days in the fridge.
