Ingredients
- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 tablespoon taco seasoning
- 1 package (9 oz) cheese tortellini
- 2 cups shredded cheddar cheese
- 1 cup enchilada sauce
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped (optional for garnish)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
1. Start by bringing a large pot of salted water to a boil. Cook the cheese tortellini according to the package directions, then drain and set aside.
2. In a large skillet over medium heat, add a drizzle of olive oil. Sauté the diced onion until it’s soft, then add the garlic and cook for 1 minute. Next, add the ground beef and cook until it’s browned. Season the mixture with salt, pepper, and taco seasoning.
3. Stir in the black beans and diced tomatoes with green chilies. Let the mixture simmer for 5 minutes to allow the flavors to blend.
4. Add the cooked tortellini to the skillet with the beef mixture. Stir in the enchilada sauce and 1½ cups of the shredded cheddar cheese. Mix everything together until it’s well combined.
5. Preheat your oven to 375°F (190°C). Transfer the entire mixture to a greased baking dish. Top it with the remaining ½ cup of cheddar cheese and bake for 15–20 minutes, or until it’s bubbly and golden.
6. Remove the dish from the oven and let it cool slightly. Dollop it with sour cream and sprinkle fresh cilantro on top before serving.
Notes
For a vegetarian option, you can omit the ground beef and use extra black beans or sautéed mushrooms instead. You could also experiment with different types of cheese, such as Monterey Jack or pepper jack, for a spicier twist. If you prefer a saucier dish, feel free to add more enchilada sauce to the mix.
