Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-sized chunks
- 12 oz rotini pasta
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 4 cloves garlic, minced
- 1 tbsp butter
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded cheddar cheese
- Fresh parsley, chopped (for garnish)
Instructions
1. Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package directions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium-high heat. Toss the chicken pieces with the Cajun seasoning, garlic powder, onion powder, salt, and pepper.
3. Add the seasoned chicken to the skillet and cook until browned and fully cooked, about 6-7 minutes. Remove the chicken from the skillet and set it aside.
4. In the same skillet, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant.
5. Stir in the chicken broth and heavy cream, then bring the mixture to a simmer.
6. Add the mozzarella, Parmesan, and cheddar cheeses. Stir until the sauce is smooth and creamy.
7. Add the cooked rotini and the sautéed chicken back into the skillet. Toss everything together until well-coated in the cheesy Cajun garlic sauce. Let it simmer for 2-3 minutes to allow the flavors to blend.
8. Garnish the Cheesy Cajun Garlic Chicken Rotini Skillet with fresh chopped parsley and serve hot, with extra cheese on top if desired.
Notes
Use a good quality Cajun seasoning blend to get the best flavor profile.
Don’t overcook the pasta – aim for al dente to prevent it from getting mushy.
Adjust the amount of Cajun seasoning to your desired level of spiciness.
Shred the cheeses just before adding them to the skillet for optimal melting.
Let the dish simmer for a few minutes at the end to allow the flavors to meld together.
