Cheesy Garlic Butter Corn on the Cob is a delicious BBQ side dish featuring fresh corn coated in garlic-infused butter and melted cheeses.
Ingredients
- Fresh Corn – 4 ears
- Unsalted Butter – softened
- Garlic – minced
- Seasonings – salt, black pepper, paprika (optional)
- Cheeses – Mozzarella, Parmesan
- Fresh Parsley – chopped
Instructions
1. Preheat the grill to medium-high, around 400°F (200°C).
2. Make garlic butter by blending softened butter with minced garlic, salt, black pepper, and optional paprika until smooth.
3. Brush each ear of corn generously with the garlic butter, coating all sides.
4. Grill the corn directly on the grill grates for 10-12 minutes, turning every 2-3 minutes until tender and lightly charred.
5. During the last minute, sprinkle mozzarella and Parmesan cheeses over the corn and close the lid to melt the cheese.
6. Transfer the corn to a serving platter, garnish with chopped parsley, and serve hot.
Notes
Choose fresh corn with bright green husks and plump kernels.
Don’t overcrowd the grill; arrange corn in a single layer.
Baste frequently with garlic butter while grilling.
Add cheese during the last minute of grilling to prevent burning.
