Ingredients
- 1 pound ground beef
- 2 cup diced potatoes
- 2 cup shredded cheddar cheese
- 1 medium onion, diced
- 2 cloves garlic, minced

- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 cup beef broth
Instructions
1. Preheat the oven to 375°F and grease a medium baking dish.
2. In a large skillet, heat some olive oil over medium heat. Add the onion and garlic, cooking until softened. Then, add the ground beef and cook until browned, draining any excess fat.
3. Stir in the salt, pepper, paprika, and oregano, blending the spices into the beef mixture. Add the diced potatoes and beef broth, mixing everything together and cooking for about 5 minutes to slightly soften the potatoes.
4. Transfer the beef and potato mixture to the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
5. Cover the casserole with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
6. Finish by sprinkling with fresh parsley, then serve hot and bubbling.
