Cheesy Ranch Chicken and Potato Foil Packets are an easy and delicious meal featuring tender chicken, flavorful ranch dressing, and cheesy potatoes, all cooked to perfection in a convenient foil packet.
Ingredients
2 cups cooked diced chicken
1 lb baby potatoes
1 cup shredded cheddar cheese
1/2 cup ranch dressing
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
2 tbsp chopped green onions
Instructions
1. Preheat oven to 400°F (200°C).
2. In a large bowl, combine cooked chicken, diced baby potatoes, shredded cheddar, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix well.
3. Divide the mixture evenly onto four sheets of heavy-duty foil.
4. Fold and seal each foil packet tightly.
5. Place packets on a baking sheet and bake for 30-35 minutes, until potatoes are tender and chicken is heated through.
6. Open packets carefully and garnish with chopped green onions. Serve immediately.
Notes
Seal the packets tightly to trap steam and moisture.
Use a thermometer to ensure chicken is 165°F (75°C).
Feel free to add vegetables like bell peppers or corn.
You can also grill the packets for 25–30 minutes or air-fry for 18–22 minutes.
