Ingredients
4 medium zucchinis, halved lengthwise
1 lb ground beef or turkey (or a plant-based meat substitute)
1 packet taco seasoning
1/2 cup salsa
1 cup shredded Mexican cheese blend
2 tbsp chopped fresh cilantro (optional)
Sour cream, for serving (optional)
Instructions
1. Preheat oven to 375°F (190°C).
2. Wash and halve zucchinis lengthwise, scoop out center flesh to form boats.
3. Brown ground meat in skillet, drain fat, then mix in taco seasoning and salsa.
4. Stuff zucchini boats with filling, top with shredded cheese.
5. Place on baking sheet and bake for 20 min until zucchini is tender and cheese is bubbly.
6. Garnish with chopped cilantro and serve with sour cream if desired.
Notes
Customize the filling with black beans, corn, or diced tomatoes.
Try different cheeses such as cheddar or Monterey Jack.
For added heat, mix in chopped jalapeños or cayenne pepper.
Ensure taco seasoning is gluten-free if needed.
