Ingredients

Scale
  • 2 cups Cooked Shredded Chicken
  • 1 packet Ranch Seasoning Mix
  • 1/2 cup Sour Cream
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Bell Peppers (mixed red and green, diced)
  • 1 tablespoon Olive Oil
  • 4 large Flour Tortillas

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the diced bell peppers and sauté until tender and slightly charred, about 5-7 minutes.
  2. In a mixing bowl, combine the cooked shredded chicken, ranch seasoning mix, sour cream, and shredded cheddar cheese. Mix well until evenly combined, adding more sour cream if needed for desired consistency.
  3. Lay out a large flour tortilla on a clean surface. Spoon a generous amount of the chicken filling onto the lower third of the tortilla, leaving space on the sides.
  4. Carefully fold the sides of the tortilla over the filling, then tightly roll the burrito from the bottom up, sealing it well.
  5. Toast the burritos in a skillet, seam-side down, until golden brown, or bake in the oven at 375°F (190°C) for 15-20 minutes, or air fry at 375°F (190°C) for 8-10 minutes, flipping halfway through.

Notes

Feel free to customize the filling with different types of cheese like pepper jack or Monterey Jack, or add black beans and corn for extra flavor and texture. These burritos can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months before cooking.
