  • 1 teaspoon vegetable oil
  • 2 1/2 cup green beans, trimmed and cut into 1-inch pieces
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
  • 2 teaspoon minced garlic
  • 1/4 cup low-sodium chicken broth
  • 1/4 cup soy sauce
  • 3 tablespoon honey
  • 2 teaspoon corn starch
  • Salt and pepper, to taste

Instructions

1. Trim the green beans and cut them into 1-inch pieces. Cut the chicken breasts into 1-inch chunks as well.

2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Season the chicken chunks with a pinch of salt and pepper, then add them to the hot skillet. Cook the chicken until it’s nicely browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set it aside.

3. In the same skillet, add the remaining 1 teaspoon of vegetable oil and the minced garlic. Cook for 1-2 minutes until the garlic is fragrant, then toss in the green beans. Sauté the green beans for 4-5 minutes, until they’re tender-crisp.

4. In a small bowl, whisk together the chicken broth, soy sauce, honey, and corn starch. Pour this mixture over the green beans and bring it to a simmer, cooking for 2-3 minutes until the sauce has thickened.

5. Return the cooked chicken to the skillet, tossing everything together to coat the chicken in the sauce. Heat everything through, and you’re ready to serve!

Notes

Choose the right chicken: Look for boneless, skinless chicken breasts that are about the same size, so they cook evenly.

Don’t overcrowd the pan: Cook the chicken in batches if needed to prevent steaming instead of searing.

Nail the green bean texture: Sauté the green beans until they’re tender-crisp, with just a bit of bite left in them.
