Chicken Marsala Orzo is a hearty one-pot dish that features tender chicken and earthy mushrooms enveloped in a creamy Marsala sauce, served with orzo pasta for a comforting meal.

- 1 lb chicken breasts, diced
- 8 oz sliced mushrooms
- 1 cup orzo pasta
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add the diced chicken and sauté until browned and cooked through, about 6-8 minutes. Remove the chicken and set aside.
- In the same pan, add sliced mushrooms and minced garlic. Sauté until the mushrooms are tender and the garlic is fragrant, around 5-7 minutes.
- Pour in the chicken broth and heavy cream, scraping up any browned bits from the bottom of the pan. Bring to a simmer and let it reduce until thickened, approximately 10-15 minutes.
- Add the cooked orzo and reserved chicken to the sauce, stirring to coat evenly. Season with salt and black pepper to taste, and heat through for 2-3 minutes.
- Serve hot, garnished with chopped parsley, and enjoy!

- For gluten-free options, substitute orzo with gluten-free pasta.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
