Ingredients

  • 1 lb chicken breasts, diced
  • 8 oz sliced mushrooms
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add the diced chicken and sauté until browned and cooked through, about 6-8 minutes. Remove the chicken and set aside.
  2. In the same pan, add sliced mushrooms and minced garlic. Sauté until the mushrooms are tender and the garlic is fragrant, around 5-7 minutes.
  3. Pour in the chicken broth and heavy cream, scraping up any browned bits from the bottom of the pan. Bring to a simmer and let it reduce until thickened, approximately 10-15 minutes.
  4. Add the cooked orzo and reserved chicken to the sauce, stirring to coat evenly. Season with salt and black pepper to taste, and heat through for 2-3 minutes.
  5. Serve hot, garnished with chopped parsley, and enjoy!
