Instructions

1. Start by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set it aside.

2. In a large skillet, heat the olive oil over medium heat. Season the bite-sized chicken pieces with salt and pepper, then add them to the skillet. Cook the chicken until it’s browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set it aside.

3. In the same skillet, add the sliced mushrooms and cook until they release their moisture and become golden brown, about 5 minutes.

4. Toss the minced garlic into the skillet and sauté for 1 minute until fragrant.

5. Pour in the Marsala wine and scrape up any browned bits from the bottom of the skillet. Let the mixture simmer for 2-3 minutes to allow the wine to reduce slightly.

6. Stir in the chicken broth and heavy cream. Bring the mixture to a simmer and cook for about 5 minutes, or until the sauce has thickened slightly.

7. Return the cooked chicken to the skillet. Add the cooked pasta and toss everything together, ensuring the pasta is well coated with the creamy Marsala sauce.

8. Stir in the grated Parmesan cheese and dried thyme. Cook for an additional 2 minutes, or until the cheese has melted and the sauce is smooth and creamy.

9. Sprinkle the chopped fresh parsley over the top before serving.
