  • 1/4 cup fresh parsley, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder

Instructions

1. Preheat your oven to 400°F and line a 12″ x 17″ baking sheet with parchment paper.

2. In a large bowl, combine all the ingredients – ground chicken, fresh parsley, breadcrumbs, Parmesan cheese, egg, olive oil, salt, black pepper, garlic powder, onion powder, and chili powder. Use your hands to gently mix the ingredients until they are well combined.

3. Roll the mixture into 12 large meatballs and place them on the prepared baking sheet, spacing them evenly.

4. Slide the baking sheet into the preheated oven and bake the chicken meatballs for 30 minutes, or until they are cooked through and golden brown.
