Instructions

  • Cook the Pasta: In a large pot, cook the penne pasta according to package instructions until al dente. Drain and set aside.
  • Season and Cook the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side until cooked through and golden brown. Remove from the skillet and slice into strips.
  • Sauté the Garlic: In the same skillet, add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant.
  • Add Tomatoes and Cream: Pour in the diced tomatoes (with their juices), heavy cream, and chicken broth. Stir to combine and let the mixture simmer for about 5 minutes.
  • Combine Pasta and Cheese: Add the cooked penne pasta, shredded mozzarella cheese, and grated Parmesan cheese to the skillet. Stir until the cheese is melted and the pasta is well coated in the creamy sauce.
  • Add Chicken and Basil: Return the sliced chicken to the skillet and toss to combine. Stir in the fresh basil and adjust seasoning with salt and pepper to taste.
