For the Piccata Sauce
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- ½ cup chicken broth
- ½ cup dry white wine (or substitute with chicken broth)
- 3 tablespoons fresh lemon juice
- 2 tablespoons capers, rinsed
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Meatballs: In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, Parmesan cheese, minced garlic, parsley, salt, and pepper. Mix until just combined. Form the mixture into small meatballs, about 1 inch in diameter.
- Cook the Meatballs: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the meatballs in batches, cooking for 4-5 minutes on each side until golden brown and cooked through. Remove the meatballs from the skillet and set aside.
- Make the Piccata Sauce: In the same skillet, melt the butter with the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Stir in the chicken broth, white wine (or extra chicken broth), lemon juice, and capers. Bring the sauce to a simmer and cook for 5-7 minutes, allowing it to reduce slightly.
- Combine and Serve: Return the meatballs to the skillet, spooning the sauce over them. Simmer for an additional 2-3 minutes to coat the meatballs in the flavorful sauce. Garnish with fresh parsley and serve warm over pasta, rice, or with crusty bread.
Notes
- For a non-alcoholic version, replace the white wine with chicken broth.
- The meatballs can also be made ahead and stored in the fridge for up to 2 days.
