Description

Chicken Piccata Meatballs are a savory and tangy dish made with tender chicken meatballs cooked in a zesty lemon-caper sauce. A perfect weeknight dinner that combines flavor, simplicity, and comfort.

Ingredients

Scale
  • 1 lb ground chicken
  • ½ cup breadcrumbs
  • 1 large egg
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil (for cooking)

For the Piccata Sauce

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup dry white wine (or substitute with chicken broth)
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons capers, rinsed
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Meatballs: In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, Parmesan cheese, minced garlic, parsley, salt, and pepper. Mix until just combined. Form the mixture into small meatballs, about 1 inch in diameter.
  • Cook the Meatballs: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the meatballs in batches, cooking for 4-5 minutes on each side until golden brown and cooked through. Remove the meatballs from the skillet and set aside.
  • Make the Piccata Sauce: In the same skillet, melt the butter with the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Stir in the chicken broth, white wine (or extra chicken broth), lemon juice, and capers. Bring the sauce to a simmer and cook for 5-7 minutes, allowing it to reduce slightly.
  • Combine and Serve: Return the meatballs to the skillet, spooning the sauce over them. Simmer for an additional 2-3 minutes to coat the meatballs in the flavorful sauce. Garnish with fresh parsley and serve warm over pasta, rice, or with crusty bread.

Notes

  • For a non-alcoholic version, replace the white wine with chicken broth.
  • The meatballs can also be made ahead and stored in the fridge for up to 2 days.
  • Serve with pasta, rice, or even a side of roasted vegetables to balance out the richness of the dish.
