Ingredients
- 2 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoon olive oil
- 1 pound cremini or white button mushrooms, sliced
- 10 ounce fresh baby spinach
- 1 medium yellow onion, finely chopped
- 4 cloves garlic, minced
- 8 ounce cream cheese, softened and cubed
- 1 cup heavy cream
- 1/2 cup low-sodium chicken broth
- 1/2 cup freshly grated Parmesan cheese
- 1 1/2 cup shredded mozzarella cheese, divided
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Preheat your oven to 375°F. Lightly grease a 9×13-inch baking dish.
2. In a large skillet, heat 1 tablespoon oil over medium-high heat. Add the chicken cubes and cook until browned but not fully cooked through. Transfer the seared chicken to a plate.
3. In the same skillet, add the remaining 1 tablespoon of oil. Sauté the onion for 2–3 minutes, then add the garlic and mushrooms. Cook until the mushrooms are soft. Stir in the spinach and cook until wilted.
4. Reduce the heat to low. Add the cream cheese to the skillet and stir until melted and smooth. Pour in the heavy cream and chicken broth, stirring constantly. Add the Parmesan, 1 cup of mozzarella, Italian seasoning, salt, and pepper. Stir until well combined.
5. Return the seared chicken to the skillet and stir to coat. Transfer the entire mixture to the prepared baking dish. Top with the remaining 1/2 cup of mozzarella cheese.
6. Bake the Chicken Spinach Mushroom Bake uncovered for 20–25 minutes or until bubbly and the chicken is fully cooked.
