  • 2 tablespoon water
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking soda (optional)
  • 2 tablespoon oil
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 1 medium white onion, sliced
  • 1/4 cup oyster sauce
  • 2 tablespoon hoisin sauce
  • 2 tablespoon dark soy sauce
  • 1 tablespoon sugar
  • 2 tablespoon green onions, chopped

Instructions

  1. Thinly slice the beef against the grain. In a bowl, combine the soy sauce, Shaoxing wine, water, sesame oil, cornstarch, and baking soda (if using). Add the beef and mix well. Let the beef marinate for 15 minutes.
  2. In a small bowl, whisk together the oyster sauce, hoisin sauce, dark soy sauce, sugar, and remaining water. Set the sauce aside.
  3. Heat 1 tablespoon of oil in a wok or large skillet over high heat. Add the marinated beef in a single layer and sear for 2 to 3 minutes until browned but not fully cooked. Remove the beef and set it aside.
  4. Add the remaining oil to the wok. Add the ginger, garlic, and white parts of the green onions. Stir-fry for 30 seconds until fragrant.
  5. Add the sliced white onion and stir-fry for 3 to 5 minutes until softened and slightly caramelized.
  6. Return the beef to the wok. Stir the sauce to re-incorporate the cornstarch, then pour it into the wok. Toss everything together until the sauce thickens and becomes glossy, about 1 to 2 minutes. Add the green parts of the green onions and toss briefly.
  7. Transfer the Chinese Beef and Onion Stir Fry to a serving plate and enjoy immediately with steamed rice.
