Instructions

1. In a mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt.

2. In a separate large bowl, cream the softened unsalted butter with the granulated sugar and brown sugar until light and fluffy.

3. Beat in the egg and vanilla extract until well combined.

4. Gradually add the dry ingredients to the wet ingredients, mixing until a cohesive dough forms.

5. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 1 hour.

6. Roll the chilled dough out on a lightly floured surface into a large rectangle.

7. Evenly sprinkle the brown sugar and ground cinnamon filling over the dough, then tightly roll the dough into a log.

8. Cut the dough log into 1/2-inch thick slices and place them on a parchment-lined baking sheet.

9. Bake at 350°F for 10-12 minutes or until lightly golden around the edges.

10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
