Cottage Cheese Egg Bites are a delightful, protein-packed breakfast or snack that’s perfect for busy mornings or meal prep.
Ingredients
- 6 large eggs
- 1 cup cottage cheese
- 1/2 cup shredded cheese (cheddar, mozzarella, or Swiss)
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 cup finely chopped vegetables (bell peppers, spinach, mushrooms)
- 1/2 cup cooked turkey bacon or chicken sausage (optional)
Instructions
1. Preheat your oven to 350°F (175°C). Lightly grease a muffin tin or use silicone muffin liners.
2. In a blender, combine the eggs, cottage cheese, milk, salt, pepper, garlic powder, and onion powder. Blend until smooth.
3. Pour the blended mixture into a bowl and stir in the shredded cheese, chopped vegetables, and cooked turkey bacon or chicken sausage if using.
4. Evenly distribute the mixture among the prepared muffin cups, filling them about 3/4 full.
5. Bake for 20-25 minutes, or until puffed and set in the center.
6. Allow to cool slightly before removing from the muffin tin. Serve warm or store in the refrigerator.
Notes
Using silicone muffin liners or greasing the muffin tin well prevents sticking.
Avoid overmixing after adding fillings to maintain a light texture.
Store in an airtight container in the refrigerator for up to 5 days.
