Ingredients
- 1 (15-oz) can black beans, drained and rinsed
- 1 (15-oz) can black-eyed peas, drained and rinsed
- 1 1/2 cups cherry tomatoes, diced
- 1 cup sweet corn (fresh, canned, or frozen)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced (optional for heat)
- 1/3 cup fresh cilantro, chopped
- 1 avocado, diced
- 1 cup black olives, sliced
- 1/4 cup crumbled feta or queso fresco
Instructions
1. In a large bowl, combine the drained and rinsed black beans, black-eyed peas, diced tomatoes, corn, bell peppers, onion, jalapeño (if using), and chopped cilantro.
2. If including avocado, dice it and gently fold it into the vegetable mixture.
3. In a separate bowl or jar, whisk together the olive oil, lime juice, vinegar, honey, and all the seasonings until well blended.
4. Pour the dressing over the bean and vegetable mixture and toss gently to coat everything evenly.
5. Cover the bowl and refrigerate the Cowboy Caviar for at least 30 minutes, allowing the flavors to meld together.
Notes
