Description
Cowboy Corn Dip is a Tex-Mex-inspired appetizer that’s creamy, cheesy, and packed with bold flavors of the Southwest. Perfect for any gathering!
Ingredients
- 1 can (15 oz) of corn, drained
- 1 package (8 oz) cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup diced jalapeños (or green chilies)
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel), drained
- 1 tsp cumin
- Salt and pepper to taste
- Optional: crumbled bacon, chopped green onions, fresh cilantro
Instructions
1. In a large bowl, soften the cream cheese and mix in the sour cream until smooth.
2. Stir in the shredded cheese, diced jalapeños, drained tomatoes, and optional ingredients.
3. Gently fold in the corn until evenly distributed.
4. Refrigerate for at least 1 hour before serving to allow flavors to meld.
5. Garnish with cilantro and green onions before serving with tortilla chips or veggie sticks.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat if desired, adding a splash of sour cream or milk if it thickens.
