Cowboy Steak and Potato Casserole is a hearty and satisfying meal that combines tender steak, creamy potatoes, and melted cheese, perfect for a chilly evening.
Ingredients
- 1 pound steak (sirloin or ribeye, cut into bite-sized pieces)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 1 1/2 pound baby potatoes (quartered)
- 1 tablespoon olive oil
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, sliced
- 1/4 cup sour cream (optional for serving)
Instructions
1. Preheat your oven to 400°F and lightly grease a 9×13-inch baking dish.
2. In a large bowl, toss the steak pieces with Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and pepper.
3. In a separate bowl, toss the quartered potatoes with olive oil and a pinch of salt.
4. Spread the seasoned potatoes evenly in the prepared baking dish and bake for 20 minutes.
5. Remove the dish from the oven, stir the potatoes, and then add the seasoned steak pieces over the top. Bake for an additional 15-18 minutes, or until the potatoes are tender and the steak is cooked to your desired doneness.
6. Sprinkle the shredded cheddar cheese and crumbled bacon over the top of the casserole. Return the dish to the oven for 5 minutes, or until the cheese has melted. Garnish with sliced green onions and serve with a dollop of sour cream, if desired.

Choose a tender cut of steak like sirloin or ribeye for best results.
Adjust seasonings to taste by adding more or less of each spice as desired.
Roasting the potatoes first helps them become crispy on the outside and tender on the inside.
